'Make things go further'

Want to make a tasty midweek dish. Roasted Butternut Squash and Chorizo Risotto So you've made a vegetable stock using the Broccoli stalk from my last blog, well done. Now what to do with it? Risotto is the answer, tasty and filling. Ingredients: Feeds four, or two hungry boys. One onion, finely diced. Butternut Squash (cubed and oven roasted) Two cloves of garlic. Chorizo, half a ring. Risotto rice - 200g. Veg Stock - 1.5l Chilli flakes.  Fresh Thyme. Salt and Pepper. Method: Start by cubing your butternut squash and placing it on a roasting tray with a drizzle of oil, place into a preheated oven at 150c for an hour. 'Don't throw me away'

Broccoli. Cheap tasty and packed with vitamins, minerals and fibre, but why do we throw over half of it away? Quick and easy tips, use a potato peeler to remove the butter woodier skin. Then use a cheese grater and grate it into a large salad or add it to my yummy coleslaw recipe on my previous blog. Add it to the base of a soup. Use it in stock. But please, don't throw it away. Stock recipe One onion  Two carrots  Two celery stalk Three of four cloves of garlic Broccoli root.  Six peppercorns and a large pinch of salt. Bay leaves, two or three or whatever fresh herbs you have going spare, I'd avoid Dill or Rosemary though...

'Don't waste those Yolks'

Remember those egg yolks from the meringue recipe, here's what to do with them.  Make a tasty coleslaw with anything you have in your salad draw. To make the mayo you will need, yes that's right, two egg yolks... 150ml veg oil (Olive oil or rapeseed oil is great but regular veg oil will also be fine) 1tsp dijon mustard pinch of salt First things first, pop the egg yolks into a food processor if you don't have one you can use an electric whisk and a bowl or a manual whisk but be prepared to do some forearm exercise.  Put the egg yolks and the dijon mustard into the small bowl of your processor and switch on. We've only got eggs...

Afternoon all and welcome to the weekend, I do hope we are all getting by and keeping sane during Isolation. Here's a bit of fun for you to use up some ingredients. If you are struggling with things to do or make have a stab at making some yummy meringues, they're SO EASY you really can't go wrong. This recipe makes nine large gooey meringues. 2 x Egg Whites (DO NOT THROW AWAY THE YOLKS) 75g Icing Sugar 75g Caster Sugar 1tsp Cornflour Pre heat your oven to 150c fan.
