'Don't Forget the Pancakes on Sticky Pickle Day'


So, the 25th February is Pancake Day, why not try something a bit different from the norm and make some savoury pancakes instead? These smoked bacon with goats cheese and sweet chilli tomato sauce are just the ticket. Here's the recipe, now go and get flipping.

Pancakes (makes four):

300g Full fat milk

2 eggs

100 plain flour (Replace with the same quantity of cornflour if making GF)

Filling:

Smoked Streaky bacon (eight rashers) grilled then chopped finely

Soft goats cheese 200g.

Creme Fraiche 200g

Tomato Sauce or Passata 

Method:

Making the pancakes is easy. Combine the ingredients and then let the mixture rest in the fridge for an hour. You all know how to flip those bad boys so I'm not teaching you how to suck eggs.

Combine half and half the same quantities of Chilli Jam and tomato sauce in a sauce pan, bring to a boil then simmer for ten minutes. Allow to Cool and store in the fridge, this will make an excellent ketchup so don't worry if you make too much, simply store in the fridge. 

Grill the bacon until crispy, then allow to cool and chop finely.

Combine the goats cheese and creme fraiche then smother the pancakes with the mixture, sprinkle over the chopped bacon and drizzle over the Tomato Chilli Ketchup. Finally, roll the pancakes into a sausage shape then chop into bite size pieces. You may argue over who gets the last piece.
